Fontina (fontine in French) is a Valdostano protected designation of origin (DOP) cheese, produced at each milking and aged for at least 3 months.

The Consortium of producers and protection of the Fontina DOP monitors the production of the product and provides for the marking of the conforming forms.

The Milk and Fontina Producers Cooperative is the largest producer that collects, ages and markets. In 1996 it obtained from the European Union the Protected Designation of Origin (D.O.P.).

In 2016 Fontina was included in the 26 best cheeses in the world by the Wall Street Journal.

The name "fontina" seems to originate from a production pasture called Fontin; other versions link it to the village of Fontinaz.

But the name could derive from the old French term "fontis" or "fondis" to indicate the particular ability of the paste of this cheese to melt with heat.
